SALMONELEX™ was developed as a broad-spectrum, bactericidal formulation of natural phage against Salmonella in food production.
The SALMONELEX™ phages have been selected from MICREOS’s proprietary collection of food grade phages. The most important selection criterion has been the sensitivity to the broadest possible selection of strains within the pathogenic genus Salmonella. The phages kill a very broad spectrum (all tested isolates) serovars within the species Salmonella enterica includeing all the subspecies and all tested isolates within the other subspecies of enterica being java, salamae, arizonae, diarizonae, houtenae and indica are sensitive. Also S. bongori isolates were tested and are sensitive. The product has been concentrated and filtered, and the formulation of the product is aimed at allowing for an optimal integration in standard and traditional processes of food production.
SALMONELEX™ is aimed at the prevention of cross contamination and the killing of undesirable Salmonella bacteria on the food during processing.
The point of intervention on meat & poultry is post-slaughter and evisceration. SALMONELEX™ may be used in (pre-) chill systems or sprayed onto the foods at points of contamination during further processing. The product, and its application, can be integrated easily within the daily routine of the normal production process.
The application of SALMONELEX™ neither affects any of the properties of the food, be it chemical or physical, nor does it have any affect on the taste and flavour of the product.
